Ingredients

2 tablespoons olive oil

1/2 small onion, chopped

1 clove garlic minced

1 jalapeno, seeded and diced

2 ounces chorizo

4 ounces mozzarella cheese, shredded

4 ounces monterey jack or provolone, shredded

6 small tortillas

Preparation

  1. Preheat oven to 400 degress. Place an 8 inch casserole in the oven while preparing the fundido.
  2. Heat oil in skillet over medium. Add onion, garlic and pepper and cook for one minute.
  3. Add chorizo and break up, cook about 5 minutes.
  4. Remove casserold from oven. spread the cheese over the bottom. Return to oven and bak until cheese is just melted, about 5 minutes.
  5. Remove from oven, sprinkle chorizo. Return to oven for 3 minutes.
