Ingredients
2 tablespoons olive oil
1/2 small onion, chopped
1 clove garlic minced
1 jalapeno, seeded and diced
2 ounces chorizo
4 ounces mozzarella cheese, shredded
4 ounces monterey jack or provolone, shredded
6 small tortillas
Preparation
- Preheat oven to 400 degress. Place an 8 inch casserole in the oven while preparing the fundido.
- Heat oil in skillet over medium. Add onion, garlic and pepper and cook for one minute.
- Add chorizo and break up, cook about 5 minutes.
- Remove casserold from oven. spread the cheese over the bottom. Return to oven and bak until cheese is just melted, about 5 minutes.
- Remove from oven, sprinkle chorizo. Return to oven for 3 minutes.
