Ingredients
Jack Cheese
4 Flour Taco Sized Tortillas
Package of Baby Bella Mushrooms
Half a Red or Yellow Pepper
Half a Red or Yellow Tomato
1 Avocado
tsp of Serano Pepper
Olive Oil, Salt Pepper to Taste
1 Electric Griddle or a large frying pan
Preparation
Grate enough cheese to cover 2 tortillas
Heat griddle to 350
Cut up mushrooms, peppers and tomatoes and serano peppers and keep separated
Toss mushrooms in olive oil, salt and pepper to taste. Throw on the griddle and cook for 3-4 mintues
Toss peppers in olive oil, salt and pepper and mix in with the mushrooms for another 2-3 minutes
Toss tomatoes in olive oil, salt, pepper and mix in with peppers and mushrooms. Cook until mushrooms look nicely sauteed. Then place in a bowl and set aside
Do not clean griddle and place 2 tortillas on the electric griddle. Cover them with cheese and a little of the serano peppers for spice. Place the other 2 tortillas on top making a quesadilla.
Flip after 3-4 minutes or when cheese begins to melt.
Cut up avocado and distribute over tortillas
After cheese is totally melted place onto a plate and put the sauteed veggies ontop of the quesadilla.
Wrap up like a taco and enjoy!
