Ingredients

1 red onion

1 red pepper

1/2 bulb of fennel(if found!)

1/4 c. Kalamata olives chopped

1 tbl spoon Balsamic vinager

2 tbl spoon fresh basil chop.

1 tbls spoon olive oil

6 tortillas

6 oz cream cheese (or creamed goat cheese!)

Preparation

Cut all veggies in dices. Mix in a bol with oil,salt&pepper. Spread on pan and cook in oven at 425F for 20 minutes. Then, back in bowl & add vinager,olives & basil. Spread cheese on tortillas and add 2 tbl spoon of mixture Fold in half and cook on BBQ 2mts (or in pan;oil the tortillas a little bit)2 minutes Voilà!!!
