Ingredients

2 pounds pumpkin - Jullien (matchsticks)

1 green pepper - Jullien

1 red pepper - Jullien

1 onion - sliced thinly

2 green/spring onions - sliced thinly

I carrot - shreaded

1 cup - white sugar

1 cup - canola oil

2 teaspoon - salt

Preparation

Julliene all vegatables and put into bowl.

Bring to boil: Vinigar, Oil, sugar and salt

POUR over vegetables.. DO NOT STIR

Allow to cool well, the stir well and then refridgerate overnight.

This should keep in the fridge for about a week.
