Ingredients
2-3 celery ribs chopped
5-7 green onions chopped
1-2 shallots chopped
2lb pumpkin seeded, peeled, cut
1teas ground cumin
1teas curry
salt pepper to taste
1 carton Swanson chicken broth
1tbs butter
1tbs olive oil
Preparation
1.Saute celery, green onions and shallots until soft 2.Add pumpkin, cumin and curry and pepper until edges start to brown. 3.Add stock, salt. 4.Simmer until pumpkin is very soft 5.Puree in blender
