Ingredients
2 T. oil
2-3 garlic cloves, minced
1 tsp grated ginger
2 lb pumpkin,cubed
1 lg. sweet potato, cubed
2 carrots, cubed
4 cups water
1 can coconut milk
2 tsp. sweet chili sauce
salt and pepper
Preparation
Saute garlic and ginger in oil until fragrant.Add vegetables and cook 8-10 minutes, stirring frequently. Add remaining ingredients, bring to a simmer and cook for 45 minutes. Blend using a stick blender. Season to taste.
