Ingredients
CRUST: 1 cup flour
1/2 cup quick oats
1/2 cup brown sugar
1/2 cup butter
FILLING: 1 cup pumpkin (l pound)
1 can evaporated milk
2 eggs
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
TOPPING:
1/2 cup chopped nuts (if desired)
2 Tablespoons butter
1/2 cup brown sugar
Preparation
Combine crust ingredients in a mixing bowl. Mix with hands until crumbly. Press into an ungreased 9X13 pan. Bake at 350 for 15 minutes.
Prepare the filling and pour into baked crust. Bake for 20 minutes at 350.
Prepare topping and sprinkle over the filling. Bake for 20-30 minutes at 350 and cut into squares.
