Ingredients
2 cups rice or oat flour
½ cup peanut butter
1 cup pumpkin puree
2 eggs
1 tsp cinnamon
Preparation
Preheat oven to 350°. Line a baking sheet with parchment paper or a silicon mat. In a large bowl, mix all ingredients one at a time, kneading well after each addition. Knead dough into a ball and roll onto a floured surface about ¼" thick. Use cookie cutters to cut out shapes. Place on prepared baking sheet and bake for 10 minutes, turning after 7. Cool and refrigerate.
