Ingredients

2 c unbleached flour

2 Tbsp. sugar

4 tsp. baking powder

1 tsp. cinnamon

3/4 tsp salt

1 1/2 c milk

1 c canned pumpkin

4 eggs, separated

1/4 c melted butter

Preparation

Mix flour, sugar, baking powder, cinnamon, salt.

Mix milk, pumpkin, yolks, and butter in another bowl. Using handheld electric mixer or wooden spoon, beat mixture until well blended.

Add milk-pumpkin mix to flour-sugar mix. and mixing with a wooden spoon, mix just enough to moisten-don’t overmix.

Using clean beaters and bowl, beat egg whites til stiff but not dry, then fold into batter.

Spoon batter onto griddle; fry until tops look dry and small bubbles appear on surface.
