Ingredients
1 pumpkin
1 onion
1 bunch of asparagus
2 cups whole-grain flour
2 teaspoon baking powder (aluminum free)
2 eggs
1/2 cup milk
1/2 cup olive oil
pepper
a pinch of salt
Optional:
3 garlic cloves
3/4 cup honey or maple syrup
a pinch of nutmeg or cinnamon
Preparation
Preheat oven at 400°F. Prepare the pumpkin by heating it up and the rid the pulp of the skin and seeds.
Bring the asparagus to a boil in salted water until tender. Sautée the sliced onions and chopped asparagus in olive oil. Garlic optional.
Beat the eggs with the milk and olive oil. Fold in the flour, baking powder and the salt. Add flour if too liquid.
Mix in the pumpkin purée, then add the asparagus, the onions. into the dough and bake for 40 mins or until knife dipped in the center comes clean.
Optional: add nutmeg or cinnamon for flavor, sweeten with 3/4 cup honey or maple syrup if served as a dessert.
