Ingredients

2 tsp flour

2 eggs

4 egg whites OR 1/2 cup whites from carton

4 cups fresh pumpkin prepared OR 2 16 oz cans canned pumpkin

3/4 cup real maple syrup

2 tsp cinnamon

1 tsp allspice

1 tsp fresh grated nutmeg

1 tsp ground ginger

2 TB ammaretto

2 tsp vanilla extract

few drops of almond extract (optional)

2 12oz cans non fat evaporated milk

OR

1 can plus one can fat free condensed (this will yeild a thicker mix)

Preparation

Combine all ingredients and either blend in blender or mix in mixer.

Pour into two crusts.

Bake 15 minutes at 450 Reduce heat to 350 and bake 35-45 minutes

Cool before cutting.

Each pie yeilds 8 slices. Per slice (approx): 240 calories 64% carb 11% protein 25% fat
