Ingredients

Dry ingredients:

1 cup cake flour (not self-rising)

1 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. ginger

1/8 tsp. nutmeg or mace

1/8 tsp. cloves (ground)

1/8 tsp. salt

Wet ingredients:

1 cup evaporated milk

1/2 tsp. orange extract

1/2 cup pumpkin puree (not pie filling)

1/4 cup dark brown sugar

1 tbs. black strap molasses

1 tbs. canola oil

1 egg, beaten

Preparation

Sift together dry ingredients. Mix the wet ingredients in a separate bowl. Make a well in the dry ingredients. Add the liquid and just mix until incorporated. Heat waffle iron and spray with cooking spray. Makes about 4 round Belgian-style waffles.
