Ingredients

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon vanilla

1 cup flour

1 cup pumpkin

1/4 teaspoon baking soda

1 egg

1/2 cup sugar

1/2 cup brown sugar

Preparation

  1. Sift all dry ingredients together in a large bowl.
  2. In a separate bowl, beat eggs and sugars together until smooth. Add to dry ingredients
  3. Refrigerate for 2 hours.
  4. Drop 1 tablespoon mounds into a deep fryer for 3 minutes at 375F.
