Ingredients

Cupcakes:

2 c. Sugar

2 c. Flour

2 tsp Baking Powder

1 tsp Baking Soda

1/2 tsp Salt

2 tsp Ground Cinnamon

3/4 c. Oil

2 c. Cooked Pumpkin

4 eggs

Fluffy Cream Cheese Frosting

3 oz. pkg. Cream cheese

¼ c. plus 2 T. soft butter

1 T. orange juice

1 tsp. Vanilla extract

1 ¾ c. powdered sugar

Preparation

Cupcakes

Combine first 6 ingredients. Add remaining, and beat 1 minute. Fill cupcakes 2/3 full. Bake at 350o for 20-25 minutes. Cool and frost with Fluffy Cream Cheese Frosting.

Frosting

Beat cream cheese and butter until light and fluffy. Add orange juice and vanilla - mix well. Gradually add powdered sugar.
