Ingredients

3 1/2 c flour

2 tsp baking soda

1 tsp salt

1 tbl pumpkin pie spice or

1 tsp ea cinnamon, nutmeg

& cloves

3 c sugar

1/2 c oil

4 eggs

2/3 c milk

1 1/2 c pumpkin (15 oz can)

1 c fresh cranberries ( I like more)

Optional: 1 c walnuts

Preparation

Sift together dry ingredients. Add next 5, folding in the cranberries last. Cranberries are light and will rise to top of unbaked mix, so majority will end up in 1st loaf if you are not careful. Bake 350 degrees for 1 hour.
