Ingredients
1 cup sugar
1 cup smart balance spread
4 eggs (or Eggbeaters)
1 15-ounce can pumpkin puree
3 cups whole wheat flour
1/3 cup flax seed meal
1 tablespoon cinnamon
2 teaspoons ground ginger
1 teaspoon ground cloves
2 teaspoons baking powder
1 cup chocolate chips
Preparation
Cream together sugar and smart balance until smooth and creamy. In a separate bowl, mix together eggs and pumpkin puree. Add to above mixture and mix well.
In a separate bowl, mix remaining dry ingredients, except for chocolate chips. While stirring, slowly add dry mixture to wet mixture. Stir in chocolate chips.
Fill two greased muffin pans with batter; each muffin should be 1/2 to 3/4 of the way filled. Bake at 350 degrees for 20-25 minutes. Do not overbake.
