Ingredients

3 cups sugar

3 1/2 cups flour

2 tsp. cinnamon

2 tsp. nutmeg

1 1/2 tsp. salt

2 tsp. baking soda

1 cup vegetable oil

2/3 cup water

One 15-ounce can pumpkin puree

2 eggs, beaten

12 ounces semisweet chocolate chips

Preparation

Preheat the oven to 350.

Lightly grease a two 12-compartment muffin pans (or use paper liners), or grease loaf pans.

-In a large bowl, combine sugar, flour, spices, salt and baking soda. -In a medium bowl, combine the oil, water, eggs and pumpkin puree. -Add the liquid mixture to the flour mixture and combine thoroughly. Add chocolate chips and stir to combine. -Divide the batter equally in the muffin cups.

Bake muffins for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before storing.
