Ingredients
1 1/4 c. mashed, prepared pumpkin
2/3 c. brown sugar
1/2 c. milk
3 eggs, separated
1 envelope gelatin
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 sugar
1 pie shell, prepared or from your favorite recipe
Preparation
Blend pumpkin, brown sugar, milk, egg yolks, gelatin, salt and spices in large sauce pan. Cook over medium heat until lightly boiling. Remove from heat and cool to room temperature. Correct temperature is reached when mixture mounds lightly when dropped from a spoon.
Beat egg whites with 1/2 sugar until stiff. Fold into pumpkin mixture. Bake pie shell as intructed and let cool. Pour filling into shell and chill for 2 hours
