Ingredients
1 cup sugar
2 large eggs
1 cup canned pumpkin
1/2 cup vegetable oil
1 cup flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 cup confectioner’s sugar
1/4 cup cream cheese
2 Tbsp softened butter
1/2 tsp vanilla extract
Preparation
- Preheat oven to 350 degrees F. Grease a 9" square pan.
- Prepare cake: In bowl, with mixer at medium speed, beat sugar and egg for 2 minutes. Beat in pumpkin and oil. At low speed, add flour, cinnamon, baking soda, baking powder and salt. Beat 1 minute.
- Pour batter into prepared pan. Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean,. Cool pumpkin cake in the pan on wire rack.
- Prepare frosting: In bowl, with mixer at low speed, beat confectioner’s sugar and remaining ingredients for 2 minutes or until fluffy. Frost the cake.
