Ingredients
3 eggs, 1 c. sugar
2/3 c pumpkin
1 t. lemon juice
3/4 c. flour
2t. cinnamon
2 t. ginger
1/2 t. salt
Filling:
1 c. powdered sugar
8 oz cream cheese
4 T butter
1/2 t. vanilla
Preparation
Beat eggs 5 min at high speed. add sugar and beat. add pumkin and lemon juice, fold in dry ingredients. add walnuts Place in 15x10 greasedand floured jelly roll pan bake 375 for 15 min turn onto a towel sprinkled with powdered sugar roll up and chill 1 hr beat filling ingredients. unroll cake and spread with filling reroll and cool slice and enjoy
