Ingredients

1 1/2 cups sugar

1 cup canned pumpkin

1/2 cup vegetable oil

1/2 cup water

2 eggs

1 2/3 cups flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

3/4 tsp salt

1/2 tsp ground nutmeg

1/4 tsp ground cloves

1/2 cup chopped walnuts

1/2 cup raisins, optional

Preparation

  1. In a large bowl combine sugar, pumpkin, oil, water & eggs.

  2. Combine the dry ingredients.

  3. Gradually add to pumpkin mix and mix well.

  4. Stir in nuts (& raisins).

  5. Pour into a greased 9in-5in loaf pan.

  6. Bake at 350 degrees for 65-70 min or until a toothpick inserted in the center comes out clean.

  7. Cool in a pan for 10 min before removing to a wire rack.
