Ingredients
1-3/4 cups pumpkin puree
2 cups whole wheat flour
1 cup oat flour
5 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp salt
2 tsp cinnamon
3 eggs
1 cup maple syrup
6 Tb oil (vegetable, canola, or corn)
1 Tb vanilla
1/4 cup apple juice
1 cup pecans, coarsely chopped
Preparation
Mix dry ingredients in a large mixing bowl. In a smaller bowl whisk together the wet ingredients. Then combine the wet into the dry and mix well. Stir in the pecans.
Oil and flour a bread pan. Pour batter into pan. Bake at 350 degrees until a toothpick inserted in center comes out clean.
