Ingredients
5 large eggs
1/2 cup sugar
2 cups half and half
1 1/2 cups canned evaporated skim milk
1 tablespoon vanilla extract
i loaf Pumpkin Bread, cut into 1 1/2 inch cubes
1/2 cup raisins
Caramel Sauce
Preparation
Preheat oven to 325 degrees. Grease 13x9 inch baking pan. Beat eggs until frothy, mix in sugar. Gradually mix in 1/2 and 1/2, evap. milk and vanilla. Combine raisins and bread cubes in prepared pan. Pour milk mixture over and mix gently. Bake pudding until tester inserted near center comes out clean,covering pudding loosely with foil if browning too quickly; about 1 hour. Cool slightly and serve warm with Caramel Sauce
