Ingredients
2 c. sugar
1 c. oil
4 eggs, beaten
2 c. can pumpkin
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 c. chopped pecans, optional
Frosting
1 (3 oz.) package cream cheese, softened at room temp.
3/4 c. butter or margarine, softened at room temp.
3 c. powdered sugar
1 tsp. vanilla
1 tsp. milk
Preparation
Combine (not including the frosting ingredients) and mix with a wooden spoon and pour into a jelly-roll pan that has been sprayed with Pam. Bake at 350 for 30 minutes.
Frosting Beat at medium speed. Add milk until desired consistency for spreading. Spread over cooled cake.
