Ingredients
DRY INGREDIENTS:
1/4 Cup Soy Flour (Hodgson Mill Brand preferred)
2 Cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
2 tsp ginger
1/2 tsp mace
WET INGREDIENTS:
1 Cup brown sugar, packed
1/3 Cup extra light olive oil (not extra virgin)
1/2 Cup molasses
1 Cup (8oz) pumpkin puree (not pie filling)
1 Cup SoDelicious Coconut milk, unsweetened
1 medium Granny Smith apple, peeled, cored & chopped
TOPPING:
1/2 Cup NoNuttin Vanilla Caramel “Granola” / Enjoy Life “Granola”
2 Tbsp crystallized ginger
Preparation
Preheat oven to 350 degrees.
Lightly coat a 10 1/2 inch cake pan with non-stick cooking spray & set aside. In a medium bowl, combine dry ingredients until well blended.
In a separate large mixing bowl, use an electric mixer to beat together the sugar & oil. Add molasses & pumpkin, mixing well & scraping sides of bowl. Stir in coconut milk.
Next, gradually stir in combined dry ingredients, until just combined. Add chopped apple until thoroughly mixed.
Pour batter into prepared cake pan. Sprinkle top with granola & bake in preheated oven for 45 minutes or until toothpick inserted in center of cake comes out clean. Remove from oven, sprinkle with crystallized ginger & allow to cool for at least 20 minutes.
