Ingredients
2 tbl chili powder
1 tbl ground cumin
1 tsp light brown sugar
1/2 tsp onion powder
pinch ground red pepper
4.5 lb boneless pork shoulder
Hamburger buns
barbecue sauce (see recipe)
Preparation
Combine first five ingredients. Rub mixture all over pork. Wrap in plastic and refrigerate 3 hours to overnight. Heat oven to 300 degrees. Remove pork from plastic and place on a rack in a roasting pan. Roast 4-5 hours until thermometer registers 170 degrees. Remove from oven and let stand 20 minutes. Pull prok to shreds and serve on buns with sauce. Can be made 2 days ahead.
