Ingredients
Enough focaccia bread to make 24 2" squares
1 1/2 cups of left over smoked pulled pork
1 1/2 cups of your favorite tomato based BBQ sauce
1 1/2 cups crushed Italian tomatoes
Sharp white cheddar cheese
Smoked yellow cheddar cheese
1 medium Red onion sliced thin 1" long
Preparation
Preheat oven to 425F.
Combine BBQ sauce and tomatoes in a sauce pan and bring to a simmer. Simmer, uncovered for 20-30 minutes to desired thickness. Meanwhile shred your cheese, chop your onions and cut your bread. Once the sauce is cooked, pour half of it into a container and reserve. Add the pulled pork to the remaining sauce. It should be just enough sauce to coat all the meat. Adjust meat and/or sauce to get the right consistency. Warm the pulled pork through on low heat, covered and stirring frequently. Once warmed through kill the heat and leave covered.
Now it is time to assemble our bites. Take a piece of bread and place a Tbs of sauce on it. Add some sharp cheddar, 1 Tbs of pulled pork, red onion and topped off with the smoked cheddar.
Bake on a sheet pan until cheese is bubbly and bread is golden brown.
