Ingredients
1 pie crust
1 deep pie dish
Five (5) Ripe Mangoes peeled and sliced
1 stick of butter unsalted
1/2 cup brown sugar
1 teaspoon allspice
1/4 cup of Puerto Rican Rum (Don-Q or Bacardi)
1 tablespoon of fresh green lemon juice
1/2 teaspoon vanilla
1/2 cup of fresh milk
1/2 cup white sugar to sprinkle crust
Preparation
- Peel and slice ripe mangoes
- Sautee mango slices in butter and add rum
- Add sugar, allspice, lemon juice and vanilla.
- Cook until mangoes are soft and a smooth syrup is formed.
- Fill deep pie crust with mangoe mix and top with crust
- Brush crust with milk and sprinkle with sugar
Bake at 350 degrees oven for 35 minutes or until crust is golden. Let stand before slicing.
