Ingredients

1 cup white flour

1 cup toasted oat bran (at Trader Joe’s)

1/4 c. brown sugar

4 tsp baking powder

zest from one orange

1 tsp cinnamon

1/4 tsp salt

2 egg whites

1/2 to 1 cup unsweetened apple sauce

1/2 cup water

1 cup chopped prunes or apricots or both

1/4 to 1/3 cup canola oil

Preparation

Preheat oven to 365. Sift dry ingredients (except fruit) into med. sized mixing bowl. In separate med. sized bowl, mix all wet ingredients. In two or three batches, fold dry ingredients into wet.
