10 thin sliced prosciutto strips

2-4 duck breast (1 - 2 ducks)

Preparation

1-tenderize 2 duck breasts 2-add olive oil, vinegar, and garlic to breasts in a baggie and marinate for 2 hours or more 3-lay 10 strips of prosciutto out 4-cut a sprig of asparagus and scallions into prosciutto width lengths, 5-lay them on the close end 6-place 1/5 of a breast of duck on the prosciutto next to the asparagus 7-crumble blue cheese the rest of the unrolled prosciutto but only in the center 8-start at the close end and roll and tuck all the ingredients into the prosciutto 9-In a large pan warm enough olive oil to coat the bottom of the pan 10-sauté the rolls starting with the exposed flap down for about 1 minute then roll 1/4 turn away from the flap and sauté for about a minute, rotate so all sides get about a minute of cooking in the oil 11-preheat an oven to 400 12-arrange the rolls on a backing sheet 13-bake rolls for 15 minutes at 400 14-slice rolls, like you would carrots, into 1/2 inch discs 15-serve hot
