Ingredients

5-6 Chicken Breasts, cubed

2 tsp turmeric

2 tsp cumin

2 tsp coriander

2 tsp cayenne

salt and pepper

2 tsp ginger, diced

2 cloves garlic, diced

2 tomatoes, diced

2 cans coconut milk

vegetable oil

Preparation

  1. Mix cumin, turmeric, coriander, cayenne, salt and pepper.
  2. Coat chicken with the spice mixture
  3. Sautee chicken until done
  4. Remove chicken from pan
  5. Fry garlic and ginger
  6. Add coconut milk and tomato
  7. Return chicken to pan
  8. Cook until tomato is soft
  9. Serve over rice
