Ingredients
5-6 Chicken Breasts, cubed
2 tsp turmeric
2 tsp cumin
2 tsp coriander
2 tsp cayenne
salt and pepper
2 tsp ginger, diced
2 cloves garlic, diced
2 tomatoes, diced
2 cans coconut milk
vegetable oil
Preparation
- Mix cumin, turmeric, coriander, cayenne, salt and pepper.
- Coat chicken with the spice mixture
- Sautee chicken until done
- Remove chicken from pan
- Fry garlic and ginger
- Add coconut milk and tomato
- Return chicken to pan
- Cook until tomato is soft
- Serve over rice
