Ingredients

3 oz butter

12 large shrimp,peeled,deveined & butterflied

Flour as needed

4 scallions,pared and chopped

8 shitake mushrooms,stems removed,sliced

Salt to taste

Pepper to taste

Fresh basil to taste

4 oz Chardonnay or dry white wine

1 oz butter

1 t fresh chopped parsley

Juice from 1/2 lemon

Preparation

Heta a skillet over medium heat.Add 3 oz butter;heat until hot. Dust shrimp with flour and saute for 2-3 minutes. Add the scallions and mushrooms and cook for 2-3 minutes. Add salt, pepper and basil. Add wine and cook for 2-3 minutes. Remove from the heat. Stir in 1 oz butter,parsley and lemon juice. Serve immediately accompanied with boiled buttered rice or orzo.
