Ingredients

8.8 oz/250g hazelnut flour

8.8oz/250g confectioners sugar

3/8 tsp salt

10.6 oz/300g egg whites

3.1 oz/90g granulated sugar

1.4 oz/40g praline paste

Preparation

Preheat oven to 350F

In a large bowl sift together hazelnut flour, confectioners sugar and salt. Combine egg whites and granulated sugar and whip to stiff peaks. Fold whipped egg whites into praline paste. Fold in hazelnut flour mixture. Line sheetpan with Silpat and spread batter. Bake at 350F for 10-12 minutes.
