Ingredients

3 Large Russette Potatoes.

2 eggs.

4 tblsp.Goose or Bear Fat.

1/4 cup Buttermilk/Milk.

1 Onion

2 tblsp.Butter

1/2 tsp.Salt

1 tsp. Soda

1 tsp. Vinegar

2 tbksp.Flour

1 tblsp. oat/Buck or wholewheat flour.

1/2 tsp. Ground Carraway.

Preparation

Peel.par-boil and mash potatoes.Sautee chopped onion in Fat until Brown. Mix Eggs, Milk and Oil in a bowl or pot. Add to potatoes in one area of potato ingredients the Carraway,soda,salt and add the vinegar. Immediately cover with the Flours and Onions and Gently, thourougly mix. Using a wetted Tblsp. add large ovals of the mix to a heated greased skillet pat down and Brown on Both sides.
