Ingredients
8 peeled baking potatoes
1c grated Queso anejo (4oz)
1c chopped cilantro
6 oz heavy cream
1T unsalted butter
Preparation
slice potatoes in 1/4" slices with mandolin. Rinse under cold running water. dry and remove xs water. In a big bowl mix potatoes, queso anejo, cilantro and cream
grease 8in square baking dish with butter. layer dish with 1/3 of potato mixture, repeat with remainder. Cover with foil
position rack in center of oven and preheat to 375. Bake for 1h. Remove from oven and let rest for 20min. with 3" cookie cutter, cut and shape into serving portions. Serve immediately
