Ingredients

5 lb potatoes, cubed

1 lb. bacon

1/2 C veg. oil

1/2 C flour

2 qt. broth

2 bay leaves

4 carrots

2 - C celery, chpd

1 med-lg onion, chpd

1 qt. Half and Half

salt

pepper

grated cheese

parsley, chpd

Preparation

Saute bacon & drain Add veg. oil to drippings and add flour to make roux Add broth & vegetables except potatoes. Simmer until veg,. are cooked. Add potatoes and simmer until tender
