Ingredients

5 lb potatoes, diced

1 lb bacon

1/2 C veg. oil

1/2 C flour

2 Qt. broth

2 bay leaves

4 carrots, chpd

3 C celery, chpd

1 lg onion, chpd

1 Qt Half and Half

salt

pepper

grated cheese

parsley, chpd

Preparation

Saute bacon and drain Add veg. oil to bacon drippings then add flour to make roux Add broth and vegetables except potatoes. Simmer until vegetables are cooked. Add potatoes and simmer until tender Garnish with cheese and parsley
