Ingredients
3 small baking potatoes (11/2 lbs) peeled and cubed
1/3 cup chopped white onion
2 cups heavy cream
2 tablespoons butter
Salt and pepper to taste
1/2 teaspoon basil
Optional bacon bits
Cheddar cheese
Preparation
Boil potato chunks until tender in a medium sauce pan. Drain. Add the rest of the ingredients (except bacon) to pan and simmer for about 15 minutes. It will get very thick. Serve topped with extra sharp cheddar cheese and bacon bits.
