Ingredients
5 boiled potatoes, diced
1 pound cooked shrimp, sliced
3 hard boiled eggs, diced
1 bunch of scallions sliced thin
6 carrots blanched and sliced
5 Tablespoons light mayonnaise
2 Tablespoons vinegar
1 Tablespoon light Italian dressing
salt and pepper to taste
Preparation
Put all ingredients into a bowl and mix well. Refrigerate for several hours to allow the tastes to meld.
