Ingredients

3 pounds small new red potatoes

1/4 cup Dijon mustard

1/4 cup sugar

1/4 cup white wine vinegar

1/2 cup finely chopped dill

salt

freshly ground pepper

3/4 cup olive oil

4 ounces smoked salmon, slices and cut into 1/2-inch pieces

Preparation

  1. Scrub potatoes but don’t peel. Put them in a saucepan and add water to cover. Bring to boil and simmer until tender, about 20 minutes. Drain potatoes and pat dry. Cut them into quarters and place in a large mixing bowl.
  2. In a small mixing bowl or food processor, comine mustard, sugar, vinegar, dill and salt and to taste. Blend thoroughly. If you want a thinner sauce, blend in 1-2 tbs warm water.
  3. Pour sauce over potatoes and mix well but carefully in order not to break up potatoes. Add salmon and toss lightly. May be served warm or cold.
