Ingredients
3 pounds small new red potatoes
1/4 cup Dijon mustard
1/4 cup sugar
1/4 cup white wine vinegar
1/2 cup finely chopped dill
salt
freshly ground pepper
3/4 cup olive oil
4 ounces smoked salmon, slices and cut into 1/2-inch pieces
Preparation
- Scrub potatoes but don’t peel. Put them in a saucepan and add water to cover. Bring to boil and simmer until tender, about 20 minutes. Drain potatoes and pat dry. Cut them into quarters and place in a large mixing bowl.
- In a small mixing bowl or food processor, comine mustard, sugar, vinegar, dill and salt and to taste. Blend thoroughly. If you want a thinner sauce, blend in 1-2 tbs warm water.
- Pour sauce over potatoes and mix well but carefully in order not to break up potatoes. Add salmon and toss lightly. May be served warm or cold.
