Ingredients

3 large potaotes

1/2- or more cup Labneh or greek style yogurt

1Tab mint

1Tab thyme

1 tab mustard

1 Tab olive oil

1-2 clove garlic

2 chopped cucumber

balck pepper and salt to taste

Preparation

Boil cubed potatoes until just soft. Strain and cool. Blend mint, thyme, garlic and olive oil in food processor. Mix herbs with labneh and mustard. Cut cucumber into cubes. Mix all ingredients together in a large bowl. Chill for one hour.
