Ingredients

2 pounds potatoes, about 6, cooked, cooled and cubed

1 1/2 cup mayonaise

1 Tbsp vinegar

1 1/2 Tbsp sugar

1 Tbsp mustard

1 tsp salt

1/2 tsp pepper

1 medium onion, chopped

4 hard boiled eggs, chopped

6 slices bacon, cooked and crumbled

Preparation

Place potatoes, onions, and eggs in a large bowl and mix. Combine mayo, sugar, vinegar, mustard salt & pepper. Whisk with wire whisk until smooth and fluffy. Pour over potatoes and mix. Add bacon and mix again. Chill and serve.
