Ingredients
2 lbs. potatoes
1/4 c. olive oil
1/4 c. lemon juice
2 green onions-chopped
2 stalks of celery-diced
2 hard-boiled eggs chopped
1 1/4-1 1/2 c. mayonnaise
salt and pepper.
Preparation
Boil potatoes until just tender when pierced with fork. Drain. While still hot remove skins and chop into 1/2" cubes. Put into bowl add oil and lemon juice stir to coat. Add green onions, eggs, celery and mayonnaise. Salt and pepper to taste
