Ingredients

1 bunch leeks

1 onion, chopped

2 qts water or stock

salt and pepper to taste

butter for sautéing

3-4 cups chopped potato

2+ cups milk

Preparation

Trim leeks. Cut in half lengthwise, then cut into 1-inch pieces. Break apart pieces in a large bowl of water to remove dirt.

Melt butter in soup pot and begin to sauté leeks. Add onions. When translucent, add potatoes and stock/water. Simmer until potatoes are cooked (20-40 min).

Mash or blend soup. Add milk and seasoning. Heat and serve.
