Ingredients

5-6 large potatoes

1-1/2 teaspoon salt

2 eggs

1 small onion

1/4 teaspoon pepper

2 tablespoons flour

1 tablespoons melted shortening

Preparation

Peel potatoes and grate along with onion. Drain water from grated potatoes. Add eggs, seasoning, and flour. Grease a 1-1/2 quart casserole and preheat in 375’ oven. Pour potato mixture into heated pan. Spread melted shortening on top. Bake at 375’ for one hour, or until nicely browned.

For latkes, blend all ingredients except fat, and drop spoonfuls into 1/2" of hot fat in a skillet. Brown on each side.

Variations: for Passover use, substitute matzah cake meal for flour.
