Ingredients
Baked Potato flesh -600gr
All-Purpose Flour -150gr
Parmesan Cheese -60gr
Egg yolks -2pc.
Salt,nutmeg -To Taste
Preparation
1-Pass your potato through a drum seive or wide grate 2-Cut in about 90% of your flour 3-Cut in the parmesan cheese 4-Cut in egg yolks and more flour as needed 5-season and knead very briefly, just to bring together 6-Roll out into strings(think play-doh) on a well floured surface 7-Cut into pieces, about 3/4 in. by 1/3 inch 8-Shape as desired (gnocchi board, pillows, ball-cuts) 9-Boil in heavily salted water 10-remove to ice bath or serve when cooked (depending on size, about 1 minute after floating)
