Ingredients

1 C. each chopped celery, carrot, & onion

4 medium potatoes, diced

1-2 T. butter

1 Qt. chicken broth

1 t. each thyme & garlic

1 Qt. half & half or 2 cans evaporated milk

2 C. shredded cheddar

1 C. ham or 1/2 C. bacon, chopped

fresh parsley as a garnish

Preparation

  1. Saute celery, onion, carrots, and potatoes in butter.
  2. Add broth, thyme, and garlic. Heat to boiling. Cover, reduce heat, and simmer 20 minutes.
  3. Add half & half, cheese, and meat. Heat on low until cheese melts.
  4. Garnish with fresh parsley. Season at the table with white pepper or red pepper sauce, as preferred.
