Ingredients

1 small yellow onion, peeled and finely chopped

2 Tbsp. olive oil

2 tsp whole caraway seeds

1 tsp salt

1/s tsp black pepper

4 cups cabbage finely shredded

4 medium red potatoes peeled and cut in 1/3 inch cubes

6 cups stock

Preparation

over medium-low heat, saute the onion in olive oil for 5-7 minutes. Add caraway seeds, salt and pepper and saute another minute Add the cabbage and cook for 2-3 minutes until it starts to wilt. Add potatoes and stock, cover and bring to a boil. Reduce heat and simmer 20 minutes on medium-low or until the potatoes are tender
