Ingredients
4 lb - idaho or russet potatoes, not peeled
3 lb - macintosh apples, not peeled
2 large red onions (for color)
2 cups - raisins or dry cranberries, or mix of both
salt to taste
1.5 tablespoon - hot curry mix
1 tablespoon - ground cumin
half teaspoon - ground cinnamon
juice of 2 limes
Approximately 2 cups - mayonnaise (to taste)
GARNISH
ripe tomatoes
radish
leafy lettuce
Preparation
1- cube potatoes into 1 inch chunks and steam till cooked but firm - rinse in cold water to stop cooking. 2- finely chop onions into the size of confetti and add to potatoes. 3- add raisins/cranberries. 4- core and dice apples into half inch pieces and immediately mix into potatoes with spices, lime juice and mayonnaise, so that apple won’t oxidize and darken. 5- fridge for at least 3 hours before serving with sliced tomato and radish garnish over lettuce bed
