Ingredients

1 potato

oil

milk

2 eggs

salt, pepper, garlic, parsley

Preparation

Peel one potato, pat dry. Chop in small pieces and fry in oil. Beat 2 eggs, add small amount of milk, season with salt, pepper, garlic and parsley. Pour over potato in hot frying pan after draining oil. Keep moving eggs off sides and bottom of pan. When cooked to your liking, turn off heat and serve on roll or bread.
